Chickpea Edamame Salad
Chickpea Edamame Salad is super easy and satisfying. Enjoy this by itself as a main meal or as a side salad. Most of us have these ingredients on hand – except for the edamame. You can find shelled edamame at a Trader Joes, Whole Foods, or even at my favorite budget store Aldi.
You can make this in a matter of 15 minutes, but do allow at least 4 hours for the marinade to soak in so that the flavors blend. The tartness of the dried cranberries offer a nice contrast to the rest of the ingredients. Everyone loves it and it’s super easy and quick to make.
Instructions
Combine the salad ingredients in a large bowl and pour the marinade over it. Stir to combine and let the flavors blend for at least 4 hours or overnight. Voila! Chickpea Edamame Salad. You won’t have to tell anyone it’s healthy.
- 2 Cans of Chickpeas (Garbanzo) Beans
- 1 c edamame beans
- 1/2 c dried cranberries
- 3/4 c green peppers
- 1/3 c shredded carrots
- 1/4 c. finely chopped onion
Vinaigrette
- 1/3 c oil
- 1/4 c vinegar
- 1 Tbsp oregano
- 1 tsp basil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp cumin
