Versatile and Creamy Avocado Dressing

creamy avocado dressingI was inspired to make a southwest chicken salad and thought a creamy avocado dressing sounded like just the ticket.  OMG – did I ever score with this one – if I do say so myself.  This dressing is so rich and creamy.  And versatile too.  You can use it as a veggie dip, or dress a sandwich with it as well.  And I almost forgot…  it’s really good for you.

Ingredients:

  • 1 peeled and pitted avocado
  • 1/2 c water
  • 2 garlic cloves
  • Juice of one small lime or about 2 Tbsp
  • 1 tsp cumin
  • 1 1/2 tsp white wine vinegar
  • Salt and pepper to taste

 

Directions

I’d recommend using an immersion blender because there is less clean up, but if you don’t have one you can use a food processor as well.  Blend all ingredients until smooth and creamy.   To prevent the avocado from turning brown, fill a container all the way to the brim to avoid air space (similar to guacamole) or squirting a bit of lime on the top of the dressing and store in the fridge.

 

You can vary the dressing by substituting out the cumin and adding tarragon, cilantro, dill, or red onion depending upon your taste.
