

We all know that kale is a super food that we should incorporate more of into our diets. And right now kale is in season! It is a cold weather green that is readily available this time of year. And the flavor is actually less strong now than during the warmer months, so if you haven’t tried it in awhile, be sure to give it another go.
This hearty salad is quick and easy to make and I almost always have the ingredients on hand especially in winter. And so the kale apple walnut salad was born! It is a great counterpoint to a meal where meat is the centerpiece, or add sliced lean meat of your choice to the salad and enjoy a complete meal.
Place the bite-sized pieces of kale into a bowl. Add the oil and lemon juice. Massage the kale – really work the oil and lemon juice into the kale until the texture has softened. Let the kale stand while slicing the apple and chopping the walnuts. Add the apple, walnuts and cranberries to the kale salad. Add salt, pepper, and cayenne to taste. Serve and enjoy!
