Simple Sauteed Spinach
When you are looking for a quick, healthy and tasty way to get greens into your diet, simple sauteed spinach is one of the easiest ways to do that.
First I saute onion in some olive oil over medium heat. After the onions are glassy I add chopped garlic. (For this recipe, because I want it to go quickly, I use the refrigerated chopped garlic in a jar. You could also use fresh garlic and put it through a garlic press as well). Saute for another 1-2 min but don’t let the garlic burn! Then put in about 4 oz of fresh spinach per person.
Your pan will be full and the lid may even have trouble closing. But don’t be concerned about the lid. The spinach will shrink down quicker than you think. I add a tbsp of water or chicken broth if I have it on hand to get the steaming going.
Every 2-3 min, give the spinach a stir. In less than 10 min your spinach will have shrunk down to a much more manageable size and have the goodness of onion and garlic all over it. Then salt and pepper to taste and enjoy! We can all be like Pop-Eye the sailor man and simple sauteed spinach will taste so much better than spinach out of a can!
Ingredients:
Organic Baby Spinach – 4 oz per serving
Olive Oil – 1 Tbsp
Onion – 1/4 finely diced onion per serving
Garlic – 1/2 tsp minced garlic per serving
Salt and pepper to taste
